09:00 — Meet the dogs
Espresso at the farmhouse and an introduction to Nina and Bruno.
09:45 — Into the oak woods
Follow the dogs through damp leaf litter and learn how the soil tells you where to dig.
11:30 — Clean and weigh
Brush your finds and learn to grade white and black truffles.
12:30 — Hillside lunch
Tagliolini, eggs and pecorino, all shaved over with the morning's haul.
