Pintxos is not tapas and San Sebastián is emphatic about it. The form is a crawl: you enter, you have the one thing that bar is known for, you drink a small glass, and you move on. The Parte Vieja has dozens of bars in a few hundred metres and each has a speciality it has been refining for decades. Get it right and you eat better in three hours than in most tasting menus. Get it wrong and you eat four mediocre things on bread.

Practical

The old town concentrates the bars, but some of the best are outside it and locals move between both. Bars fill hard from about 8pm.
